The Casa De Carli epitomizes the spirit of the Italian restaurant in the heart of Prague, fitted with all the features of rich culinary traditions in Italy, combined with the vibrant spirit of the Czech capital. Founded in July 2012, the restaurant is a realization of a shared dream by Matteo De Carli and Lenka Hermanová, who met while working at the Four Seasons Hotel in Dublin. It was these international experiences and an inbred love for hospitality that led them to open a restaurant that encompasses their personal and professional voyages.

Matteo De Carli is the chef at Casa De Carli. He has had a career that took him right from Italy to Geneva, Dublin, Dubai, and New York, where he was an executive chef with Cipriani. It is this diverse gastronomic background that has given Casa De Carli's menu its unique blend of flavors and techniques, enabling guests to have a singular fine dining experience that continues to respect the hallowed traditions of Italian cuisine while embracing influences from around the world. For Matteo, cooking is an experience in itself-a combination of his love for fresh, high-quality ingredients, finally mixed with an edge of skill and creativity.

Casa De Carli was co-founded by Lenka Hermanová, coming with years of experience in hospitality management. With a Cornell University degree and having managed restaurants like Four Seasons and the Library Hotel in New York, Lenka brings the highest level of expertise to each guest who walks into Casa De Carli. The ability to create a warm and inviting environment is absolutely reflected in every component of this restaurant, which allows them to treat their guests like family.

If Casa De Carli is anything to do with quality, then the selection of ingredients will say it all. The restaurant sources as much meat locally as possible, including from a renowned local Wagyu farm, while other local farms are engaged for beef, veal, and rabbit. It sources its fish directly from the sunny shores of Italy to ensure that only the freshest catch is brought to the table. Fruits and vegetables are mainly picked directly from a secret garden in the Mělník region, maintained with the co-operation of a very helpful local grower. Anything not found on the premises is picked directly from other Italian farms or chosen from products available at the local farmers' markets.

There is also a hydroponic farm in this restaurant, with bright green herbs and salads grown in water greenhouses on its premises. This means an unbroken supply, while flavor and freshness burst from every single dish in this kitchen.

Wine at Casa De Carli is another passion, with a carefully curated wine cellar that complements the menu to perfection. This selection has come about in collaboration with devoted wine enthusiasts, so it is guaranteed that every bottle will be a very good representative of what there is. Visitors are welcome to tour the cellar and even choose wines for pairing, which will take every meal to a new height and make every visit to Casa De Carli special.
