Located at the foothills of the Rocky Mountains in Boulder, Colorado, Flagstaff House provides fine dining one would not easily forget. Constructed in 1929 as a summer cabin by Chicago schoolteacher Hattie Bilchert, it was sold in 1954 to the Buelkes family, who developed it into a gracious restaurant. In 1971, Don Monette purchased the Flagstaff House and expanded the property, thereby gaining year-round access and several outdoor terraces to enhance the dining experience with stunning views from atop Flagstaff Mountain at an elevation of 6,000 feet.
Flagstaff House offers a long history along with fine dining. Adam Monette, Executive Chef Chris Royster and his culinary staff, are known for their creative New American tasting menus that almost change daily, highlighting fine local, seasonal, and rare ingredients. Guests can choose from a four-course tasting menu or an extended Chef's tasting menu for a true gastronomic adventure.
Wine has been a Flagstaff House family passion since the founder, Don Monette. The restaurant boasts a wine cellar of over 16,000 bottles and has been the recipient of the highly prized Wine Spectator Grand Award every year since 1983, which matches any meal perfectly.
